Jean-Philippe Blondet uit Nice leidt de keuken al tien jaar, met de hand-gedoken sint-jakobsschelp met beurre blanc en kaviaar, het kreeftmedaillon met Périgord-truffel en de baba zoals in Monte-Carlo als vaste waarden.
